Las algas son buena fuente de calcio, hierro, potasio, ácido fólico y también otras vitaminas del complejo B, carotenos y vitamina E.
Son especialmente importantes en la nutrición vegana por su aporte en proteínas, hierro y calcio, que por lo general son nutrientes que suelen predominar en alimentos de origen animal.
Las algas pueden venir crudas o desecadas y se pueden preparar en múltiples platos.
Las algas más importantes o conocidas en el mercado son: el alga agar, alga kelp, alga espirulina, alga Wakame, alga kombu. Su diferencia radica en su coloración y en su valor nutricional.
Por su contenido en hierro, vitaminas y minerales, el alga wakame es un alimento completo. Lo más relevante es su alto contenido en calcio y yodo.
Contiene vitaminas del complejo B, hierro y ácido fólico. Tienen pocas calorías (160 Kcal por cada 100 gramos)

¿Cómo preparar Algas Wakame?
Normalmente lo venden deshidratado y se necesita muy poca cantidad para rehidratarlas, ya que aumentan mucho su volumen. Se pueden preparar platos nutritivos y rápidos. Con el furor del Sushi las algas no solo están de moda sino que están mejor valoradas.
